In 1961, the Latz family settled in Correns and began winemaking after Gottfried and Lisa acquired Domaine Aspras. By the 1980s, the estate had earned a strong reputation for outstanding white wines. In 1995, Michael Latz became Mayor of Correns and actively urged local growers to switch to organic farming, achieving notable success that renewed the village’s sense of purpose. The move also enhanced the quality of the wines and strengthened Correns’ standing as a remarkable terroir. Château Aspras later received High Environmental Value Level 3 certification for its environmental commitment. In 2022, a new state-of-the-art cellar was opened, securing the estate’s future for the fourth generation.

Fosse Sèche is a historic wine estate in Vaudelnay, Loire Valley, first mentioned in 1238. Vines have long been cultivated, encouraged by the Benedictine monks of Montreuil-Bellay. Medieval vats, a 16th‑century wall, a communal oven, a chapel, and a dovecote still mark the site. Today, heritage blends with a modern, precision approach: 11 ovoid concrete tanks, inspired by ancient dolia and shaped by the golden ratio, enable gentle, natural élevage so terroir and grape variety speak without artifice. All wines come exclusively from estate-grown grapes. Farming is organic and biodynamic, prioritizing living soils and ecosystem balance. The property spans 45 hectares in a single block, with 15 hectares planted to vines and 30 hectares kept natural as meadows, hedges, wetlands, and trees to support biodiversity. A wetland area hosts over 4,500 trees, annual melliferous flowers for pollinators, wildlife shelters, and biodiversity monitoring. A plant-based wastewater treatment system (installed 2024) naturally purifies groundwater. The project is led by the Pire and Séché families, united by respect, transmission, and authenticity, with Guillaume Pire crafting precise bottlings rooted in Fosse Sèche.

Rémi Desmaris began his winemaking journey in 2016, establishing a five-hectare estate while initially collaborating with his cooperative wine-growing parents. Though he started selling his harvests in bulk, Rémi quickly realised his aspiration to create and market his own bottles, devoted to enhancing and protecting his terroir. In 2019, he converted his maternal grandfather Aimé Blouzard’s cow shed into a winery, bringing to life the estate he had envisioned, and that same year, he embarked on his transition to organic farming. By 2024, Rémi’s wife, Sarah, joined him, both motivated to expand bottled sales while preserving the historic farm and local natural heritage. The estate has now grown to nearly 13 hectares, featuring clay-limestone soils and flint-rich plots. Committed to environmental sustainability, they embrace agro-ecological practices that promote soil regeneration and biodiversity. Techniques such as maximising grass cover and utilising shoots from ancient vines for grafting ensure a respectful approach to the land. With the introduction of sheep for vitipastoralism and a small apiary, their landscape initiatives also include replanting hedges and preserving unplanted areas to restore the historic Mâconnais bocage. The wines a blend of Chardonnay, Pinot Noir, and Gamay are fermented with indigenous yeasts, bottled unfiltered, and matured in concrete, stainless steel, and oak barrels.

In 1979, Bernard and Cécile Croisille embarked on an enriching journey, leaving behind urban comforts to embrace the picturesque landscape of Fages, near Luzech. With only their youthful zeal and a dream of farming, they took on the neglected land as tenant farmers. This parcel had long awaited revival, and the couple poured their hearts into clearing, planting, and nurturing the first seven hectares approximately seventeen acres of vines. Their patience culminated in 1984 when they celebrated their first yield at the Parnac winemaking cooperative, laying the foundation for their legacy. With an unrelenting desire to excel, Bernard and Cécile diligently sought to refine their viticultural skills. After a decade of fruitful collaboration with the cooperative, they opted for independence, diving headfirst into vinification. This bold decision sparked a new chapter of experimentation and innovation, supported by a neighbouring winemaker’s facility. Eventually, they restored an old viticultural estate, creating a dedicated space for their craft. In 2008, their second son, Germain, joined the family venture, leading the vineyard toward organic practices. He was soon joined by Nicolas and Simon, bringing fresh energy as the estate fully embraced Biodynamic Agriculture, a testament to the Croisille family’s enduring passion for the land.

Nestled between sea and mountains in northern Sardinia, La Sughera is the wine estate of Regula Graf and Francesco Welti. The founders bring over a decade of Ticino winemaking to a land long shaped by viticulture, near Aglientu facing Corsica. The hills offer excellent ventilation and a terroir that favors character, richness, and elegance. La Sughera sits in Vermentino country, Gallura’s celebrated white, while also valuing Sardinia’s aged and lesser‑known varieties.
Red grapes include Caricagiola, Bovale Sardo, Cagnulari, Cannonau, and Monica; whites include Vermentino, rare Arvesiniadu, and a local Moscato clone unique to the estate. Their aim is to preserve Sardinia’s viticultural heritage and produce wines with authenticity, originality, and a natural‑wine approach rather than conventional sameness.

Biologica Stellino was born in 2016 to give voice to a family’s passion and celebrate the unique characteristics of their land, which was fully converted to organic farming in 2008. The estate tells the story of a dream one that began with the grandfather of the current generation’s father, who returned from “the new continent” and invested his energy into cultivating vines. Today, Tommaso and Pietro represent the face, sweat, and heart of Biologica Stellino. They are the fourth generation of a family devoted to the land and driven by passion. The vineyards are located in the territory of Monreale, bordering the municipalities of Alcamo, Calatafimi Segesta, and Camporeale. The estate is divided into two main bodies of land, each with distinct characteristics that shape the wines. Contrada Fratacchia is north-facing, composed of predominantly clay soils, partially flat and half hilly where the clay holds moisture and minerals, giving structure and depth to the wines. Contrada Sirignano is south-facing with loose, well-drained hilly soils, where the drainage and sun exposure produce concentrated, expressive fruit. Their wines are born exclusively from indigenous organic grape varieties, with minimal intervention to let the terroir speak.

Tagaro is a family driven Puglian winery led by Michele Lorusso, the new generation who turned his parents’ experience into a modern project open to the world.Rooted in local rural tradition, the estate aims to reinterpret Puglia through wines with a bold yet refined character. Their vineyards span several key areas of the region, Valle d’Itria, Salento, and the northern Bari area, bringing different soils and climates into the range.

Tenuta San Bartolomeo embodies a family’s legacy, marked by personal stories and transformative changes. This vision culminated in a winery nestled in the Alta Val Tiberina, an area yet to gain renown for viticulture but brimming with potential. Located between the charming hamlets of Resina and Parlesca in northern Perugia, the estate spans approximately seven hectares, cultivating varieties like Petit Verdot, Merlot, Grero, Pinot Noir, Vermentino, Trebbiano, and Pinot Grigio. Deeply rooted in a winemaking tradition, the family nurtures their vines using non-invasive practices, honouring time-honoured methods while embracing contemporary techniques in the cellar, seamlessly blending ancient practices with a modern understanding of winemaking today.

The estate manages 4.0 ha of vineyards (1.2 ha leased) planted with Lacrima, Sangiovese, Montepulciano, and Verdicchio. A favorables microclimate and natural methods support bio-diversity with minimal intervention. Practices include grass mowing, alternating-row sowing of multi-flower cover crops, and naturally flourishing wild herbs. Vines are pruned to encourage ramification; early leaf removal on compact varieties reduces vigor and cluster size. No synthetic fertilizers; soil nourished by cover crops and occasional biodynamic preparations.
Treatments use sulfur and low-dose copper, plus plant/wood extracts and mineral boosters. Fermentation is spontaneous with indigenous yeasts and no temperature control. No excessive maceration; complexity is built through time on fine lees and yeasts in neutral vessels that don’t impart aromas.
