Vinification: A blend of Viognier and Chardonnay, is meticulously crafted from grapes harvested around the Etang de Thau. The process begins with 100% destemming, followed by a gentle maceration of 10-12 hours in refrigerated tanks to extract flavour and aroma. After pressing, the juice ferments under controlled temperatures before maturing for four to five months in stainless steel tanks. This careful vinification highlights the wine’s origins from the unique clay, limestone, and quartzite terroir of the region.
Tasting Note: It showcases a lovely pale gold hue with hints of light green reflections. Its powerful nose bursts with enticing aromas of apricots, pears, and white flowers. On the palate, it strikes a harmonious balance, revealing delicate floral nuances. The finish is full and smooth yet refreshingly vibrant, underscored by a touch of exotic fruit. The velvety texture and rich, aromatic profile reflect the mineral qualities of the limestone terroir from which it originates, enhancing its overall complexity.
