Sangiovese Rubicone Igp “Chillea” – Amphora – Tenuta Mara

This is the first example of a rare amphora-fermented version of the estate’s Tenuta Mara top Sangiovese. Only 450 bottles were produced.

Vinification: The vinification process of Chillea embraces whole-bunch fermentation and extended maceration in 600-litre terracotta amphorae, utilizing wild yeasts from the grape skins without any added interventions. Grapes are hand-harvested in mid-September, and the fermentation lasts until April, followed by a month in old oak barrels. After this, the wine undergoes a 12-month bottle aging, ensuring a refined, natural character in the final product, reflective of their commitment to minimal intervention and biodynamic principles.

Tasting Notes: This wine showcases a bright, translucent ruby red hue, exuding alluring aromas of potpourri, dried flowers, and candied fruit. Its palate is round and supple, boasting a delicate texture and balanced freshness, complemented by nuanced tannins. The finish intriguingly reveals menthol undertones alongside a mouthwatering amaro note, creating a captivating tasting experience.
