Vinification: Pema is a natural, low-intervention 100% Cabernet Sauvignon from Tuscany’s Etruscan coast, fermented in steel and aged 12–15 months in sandstone amphorae to preserve freshness and refinement. Produced in limited quantities, about 2,000 bottles, on the Fuori Mondo estate, it avoids heavy oak, yielding a savoury wine with bright fruit and herbal notes. Grown organically on clay-shale soils, hand-harvested, the wine embodies boutique ethos and a name inspired by Olivier’s Tibetan journey.
Tasting note: It glides across the palate with a creamy texture and flawless balance, its aromatic clarity quietly stunning. The nose is intense, unveiling bright cherries and berries with savory, earthy undertones and a touch of oak. On the palate, it remains elegant and fresh, the finish lingering with refined tannins and fruit, a polished example of modern Tuscan grace.
