Vinification: The Tempranillo grapes undergo careful vinification, beginning with de-stemming and crushing, followed by a 36-hour cold maceration to enhance their aromatic profile. The must is then gravity-fed and naturally decanted at low temperatures before undergoing a 14-day alcoholic fermentation at 14 °C. After this, a post-fermentation maceration on the lees occurs, followed by racking and storage in sealed concrete deposits, which prepares the wine for filtration and bottling.
Tasting Notes: This wine showcases a beautiful violet-red hue, with aromas of red and black berries accentuated by hints of graphite and subtle dried herbs. On the palate, it offers vibrant flavours of fresh fruit, delicately paired with a touch of dry grass. Its well-defined tannins make it an excellent match for Spanish tapas, pasta, and meat dishes.
