Vinification: Nestled in Valpolicella Classica, this wine is crafted from 70% Corvina, 20% Rondinella, and 10% Corvinone. After a meticulous hand harvest in late September, the grapes are dried in airy conditions, losing about 45% of their weight by February. Vinification begins with traditional crushing and destemming, followed by a 45-day fermentation at temperatures of 10-20°C, with regular pump overs. The wine is then transferred to oak barrels for 36 months of maturation, followed by an additional 6 months of bottle ageing, resulting in a refined and expressive final product.

Tasting Note: This wine showcases a dense, luminous garnet red colour. Initially austere, its bouquet gradually reveals sweet notes of dark fruits, dried violets, cocoa, prunes, and walnuts. On the palate, it is rich and robust, perfectly balanced with outstanding finesse. The lengthy aging process allows its complex flavours to harmonise beautifully, creating a truly exquisite experience.
