“Chillea” Biodynamic Sangiovese – Anfora – Tenuta Mara
£61,60
This is the first example of a rare amphora-fermented version of the estate’s Tenuta Mara top Sangiovese. Only 450 bottles were produced.
Vinification: Grapes are harvested, and bunches are selected on the vines in mid-September. Slow alcoholic fermentation and maceration with whole bunches in a 600-litre terracotta amphora continue until April. Wild yeast ferments with no additions or further processing until decanting with racking in old oak for one month—a refinement of about 12 months in the bottle.
Tasting Notes: Shining a bright, translucent ruby red, this wine presents aromas of potpourri, dried flowers, and candied fruit that tease the palate, which is round, supple, and ample. It ends with a mouthwatering Amaro finish.
