Vinification: This biodynamic vineyard, certified in sustainability, cultivates 100% Sangiovese grapes with an average vine age of 10 years, thriving in clay and limestone soil. Grapes undergo meticulous hand-selection and optical sorting before being fermented in conical oak casks without temperature control or added yeasts. After a month of skin maceration, the wine matures for 12 months in concrete barrels and an additional six months in the bottle, showcasing the pure essence of its Romagna terroir.
Tasting Note: A translucent ruby red Sangiovese exuding an ample bouquet of rose hips, ripe cherries, and summer melon, accented by rosemary and orange zest. On the palate, it boasts silky tannins, vibrant acidity, and flavours of Amarena cherries, raspberries, and star anise, culminating in a pleasantly balanced finish with refreshing menthol notes.
