Vinification: In October, the grapes are meticulously hand-picked and fermented using indigenous yeasts in large 60-quintal wooden vats. This traditional process, which includes manual punching down, is conducted without temperature control. After fermentation, the wine matures for twelve months in French oak barriques, followed by an extensive forty-eight months in large oak barrels. Finally, it is aged in the bottle for one additional year before being released, ensuring a beautifully refined product.
Tasting Note: It showcases a deep ruby red colour with purple reflections. It delights the nose with elegant aromas of plum jam, blueberry, and black cherry, intertwined with floral notes of dog rose and violet. On the palate, it delivers boldness with vibrant tannins and exceptional finesse, while its long finish reveals a distinct minerality.
