Vinification: The process begins with the careful hand-picking of grapes from early September to mid-October, ensuring only the finest are selected. Fermentation occurs in spacious 60-quintal wooden vats with indigenous yeasts, featuring manual punching down and no temperature control. After fermentation, the wine matures in French oak barriques for twelve months, followed by forty-eight months in large oak barrels. It then undergoes an additional year of bottle ageing before release, resulting in a refined and captivating wine ready to delight discerning palates.
Tasting Notes: This powerful and super velvety red wine showcases a deep ruby red hue with enchanting luminosity. Its complex nose reveals wild berries, cherry chocolate, and sweet violet, gradually evolving into notes of leather and black coffee. On the palate, it presents a powerful yet smooth entry with well-integrated tannins. Juicy and crisp, it invites repeated sips with its refreshing balance and lingering fruitiness, reflecting a wine still in development.
