Salice Salentino Riserva Rosso Dop “Moros” – Cantina Moros di Claudio Quarta
£35,00
Vinification: The process begins with the careful selection of Negroamaro and Malvasia Nera grapes, which undergo fermentation in temperature-controlled stainless steel tanks. This is followed by extended maceration to extract colour and tannins. The wine is then aged for a minimum of 12 months in oak barrels, allowing for complexity to develop. After ageing, it is filtered and bottled, reflecting the unique terroir of the region.
Tasting Note: The wine presents a deep garnet colour, illuminated with light. Its nose features pure aromas of dark cherry, liquorice, and rose petals, alongside notes of tobacco and sweet spices, with hints of candied orange and pine resin. The palate is robust yet elegant, with firm tannins, notable persistence, and a slightly bitter, spiced cocoa finish.
