Vinification: Utilising the Guyot training system, vines are cultivated at a density of 4,200 to 5,800 per hectare. Hand-harvested in mid-October, the grapes undergo fermentation with native yeasts in large wooden vats, followed by 13 months in French oak barriques. The wine ages an additional year in large casks before being bottled unfiltered and resting for 6-8 months pre-release. Made entirely from Schioppettino grapes, it achieves a robust 15% alcohol by volume, reflecting a meticulous and traditional vinification process.
Tasting Notes: An intense ruby red colour with purple highlights. Its complex bouquet features fresh cherries and blackberries, enriched by spicy notes of pepper and cloves. On the palate, it is warm and full-bodied, balanced by refreshing acidity and leading to a long, lingering finish that reveals subtle hints of cocoa and coffee.
