Vinifcation: This exquisite rosé cuvée, predominantly crafted from 95% Pinot Noir and a hint of Chardonnay, showcases the unique characteristics of its single plot and vintage. The grapes, sourced from the clay and limestone soils of the Côte des Bar, undergo a brief maceration of eight to twelve hours to impart a delicate colour and flavour. Vinified using the traditional saignée method, the wine enjoys a 24 to 36-month ageing process, allowing it to develop a refined complexity. Malolactic fermentation adds softness, while a modest dosage of 6 g/l enhances its brut style, resulting in a wine that beautifully balances fruitiness and elegance, reflecting the essence of its harvest year.
Tasting Note: A raspberry-pink rosé captivates with its fluid, satiny texture and delicate collar of fine bubbles. The creamy effervescence introduces a clear, vibrant profile, while the palate delights in pulpy, crunchy fruit accented by a clay-marl minerality that adds depth. The slender finish is enhanced by taut raspberry acidity, leaving a refreshing and lively impression.
