Vinification: It is crafted from 100% organically grown Sauvignon Blanc grapes in Rueda’s diverse clay-limestone and pebble soils. After late, hand harvesting, fermentation occurs in stainless steel with natural yeasts, meticulously paused to achieve a harmonious balance of around 10-11% alcohol and 60-80 g/l residual sugar. The wine is then aged on fine lees to enrich its texture before being clarified and bottled, retaining a hint of carbon dioxide for protection.
Tasting Note: It presents a soft golden hue, exuding aromas of exotic fruits like ripe pears in syrup and tropical notes of passion fruit and peach. On the palate, it offers a delightful balance of fruity sweetness and vibrant acidity, complemented by stone fruits and floral hints. The finish is long, elegant, and refreshingly persistent.
