Vinification: It begins with a period of cold maceration to extract rich flavours and aromas from the grapes, which are harvested at peak ripeness. Three distinct Sauvignon Blanc clones are vinified separately, enhancing the wine’s complexity. After 15 months of careful crafting, including blending and macro filtration to ensure clarity, the final product is bottled. It undergoes an additional two months of aging before release, resulting in a refined wine presented in a limited batch of 1000 bottles.
Tasting Note: This bright yellow wine boasts a robust structure, blending elegance and drinkability seamlessly. Its vibrant acidity delivers freshness, while minerality reflects the terroir. Aromatic notes of green pepper and tomato peel emerge alongside a rich palate featuring pear, apricot, and melon. The wine concludes with a smoky, mineral finish, making it an exceptional companion for food.
