Vinification: This 69-year-old vineyard uses the double Guyot pruning method and refrains from herbicides. Hand-harvested in early September 2023, the grapes are carefully selected, gently crushed, and chilled to 8-10 degrees for 24 hours of maceration. After soft pressing, fermentation occurs in stainless steel tanks at controlled temperatures of 16 to 18 degrees. The wine matures for about seven months on the lees before bottling and is naturally stabilised, showcasing a commitment to quality craftsmanship.
Tasting note: a pale straw-yellow hue with greenish reflections. Its aromatic bouquet evokes elderflower and sage, alongside hints of tomato leaf and green pepper, infused with citrus notes of lime and grapefruit. The palate is broad and mineral, characterised by freshness, vivacity, and a harmonious elegance, while any potential deposit results from natural stabilisation.
