Vinfication: This wine is produced from 100% Tai grapes using the Sylvoz training system, with a density of 3,300 plants per hectare and a yield of 110 quintals. The alluvial soil, rich in calcium and magnesium, imparts unique salinity and minerality to the grapes. Following a manual harvest, the grapes undergo gentle pressing and 24-hour cold maceration at 5°C to extract aromas. Fermentation occurs between 14-16°C with selected yeasts for 8-14 days, followed by six months of aging in stainless steel.
Tasting Note: It presents an intense bouquet of floral and fruity notes, revealing hints of pear and ginger. Its pale straw-yellow colour, with green nuances, complements a fresh and dry palate, culminating in a delightful finish of bitter almond. The overall profile is both vibrant and savoury, making it a truly refreshing choice.
