TASTE: The taste is fresh and dry with a pleasant finish of bitter almond.

SCENT: An intense bouquet with floral and fruity notes, hints of pear and ginger.

Prior to start fermentation, the grapes undergo a cold maceration on the skins for around 24 hours at low temperature around 5°C to enhance extraction of aroma and flavor compounds, improving the overall quality of the wine produced. 20 up to 30% of the wine completes the malolactic fermentation to grant the wine more complexity. The fermentation is started with autochthonous yeast specially selected by the Lison DOCG consortium.
