Vinification: This flat, alluvial terrain features mineral-rich soil, enhancing the grapes with unique salinity and mineral notes that reflect in the wines. Hand-harvested, the grapes undergo gentle pressing and cold maceration for 12-16 hours to maximise primary aromas. Fermentation lasts 7-10 days at 16-18°C with selected yeasts. The wine matures in stainless steel with regular bâtonnage before resting in the bottle for two months, culminating in a wine with 13% alcohol that showcases its distinct character.
Tasting Note: It reveals elegance and aromatic complexity, with floral and mineral notes and a hint of green olives. The palate is immediately fresh and savoury, featuring an almond paste aftertaste. The intense bouquet showcases white flowers and fruits like peach and pineapple, leading to a long, elegant, and persistent finish.
