Vinification: It originates mainly from the esteemed Vertus 1er Cru, enriched by select parcels from notable Grand Cru regions such as Le Mesnil-sur-Oger and Avize. Crafted from 100% Chardonnay, the grapes come from vines approximately 45 years old, thriving in a clay-limestone terroir. The organic winemaking process features indigenous yeast and a blend of vintages, with 50% aged in oak barrels and 50% in stainless steel. Spending 48 months on the lees without added sugar, the result is a full-bodied, refreshing cuvée that beautifully balances richness and complexity.
Tasting Notes: It reveals aromas of toasted brioche and pan-roasted spices, complemented by hints of baked apple crumble. On the palate, sweet spice intertwines with baked orchard fruit and a touch of citrus zest. With a light straw colour and elegant minerality, it boasts a rich, full-bodied character, showcasing expressive flavours and a long, balanced finish, all without added sugar.
