Vinification: A nocturnal harvest of grapes, ensuring freshness by picking during cooler hours. After careful sorting, only the finest juices are chosen for vinification. A brief cold maceration follows, allowing for the extraction of delightful flavours, before the traditional fermentation occurs at a gentle 18°C. Finally, the wine matures on its fine lees for several months, enhancing its richness and complexity, resulting in a beautifully balanced product.
Tasting Note: This dry white wine boasts a light yellow colour flecked with green reflections. Its complex bouquet reveals exotic fruit, fresh almonds, and rhubarb, inviting the senses. On the palate, it offers a rounded, medium to full-bodied experience with impressive length and a refreshing finish, echoing the exotic notes found on the nose. A mineral acidity beautifully balances the fruitiness, resulting in a wine that showcases both vibrancy and depth through traditional vinification methods.
