An intense bouquet with floral and fruity notes and hints of pear and ginger. The taste is fresh and dry with a pleasant finish of bitter almond.
Prior to starting fermentation, the grapes undergo a cold maceration on the skins for around 24 hours at a low temperature of around 5°C to enhance the extraction of aroma and flavour compounds, improving the overall quality of the wine produced. Up to 30% of the wine completes the malolactic fermentation to grant the wine more complexity. The fermentation starts with autochthonous yeast, which has been specially selected by the Lison DOCG consortium.
