Vinification: Mâcon-Villages is a crisp, unoaked 100% Chardonnay from southern Burgundy, made from hand-harvested fruit grown on clay-limestone soils. The grapes are gently direct-pressed to capture pure, bright flavours, then spontaneously fermented in tanks with native yeasts. Kept on their own in tank ageing, the wine remains fresh and mineral, finishing with minimal intervention, typically bottled unfined and unfiltered using only low sulphur at bottling.
Tasting note: A bright pale lemon-straw wine, clear and luminous, with a vibrant, clean nose of fresh citrus, orchard fruits and white blossoms. On the palate it’s crisp and linear, guided by taut acidity, generous fruit and striking flinty, chalky minerality. Hints of almond skin and a subtle saline, iodised edge add depth. The finish is medium-to-long, exceptionally clean, and focused, lingering on citrus peel and pear.
