In 1961, the Latz family settled in Correns and began winemaking after Gottfried and Lisa acquired Domaine Aspras. By the 1980s, the estate had earned a strong reputation for outstanding white wines. In 1995, Michael Latz became Mayor of Correns and actively urged local growers to switch to organic farming, achieving notable success that renewed the village’s sense of purpose. The move also enhanced the quality of the wines and strengthened Correns’ standing as a remarkable terroir. Château Aspras later received High Environmental Value Level 3 certification for its environmental commitment. In 2022, a new state-of-the-art cellar was opened, securing the estate’s future for the fourth generation.
