
Ayunta is a small family-run winery encompassing 5.8 hectares of ancient vineyards situated between 650 and 1,000 metres above sea level on the northern slopes of Mount Etna, Europe’s largest volcano. The terroir boasts incredible variety, changing dramatically over mere metres. Its distinct stratification and mineral richness, including phosphorus, magnesium, and silica, create unique environments for vine cultivation. The estate predominantly features old vines, some over a century old, planted irregularly as per ancestral traditions. Instead of a single clone, diverse varieties from local plant cuttings form a unique mosaic. The vinification process is straightforward, focusing solely on grapes and allowing time for maturation, resulting in elegant, characterful wines capable of evolving beautifully while retaining finesse on both the nose and palate.
