
Cantina Moros is a charming boutique winery that beautifully fuses industrial architecture with the rich history of wine production. Housed in a restored 1950s Puglian factory, it specialises in the exceptional Salice Salentino, a wine that embodies the heritage of the Salento region. Located in Guagnano, a historic centre of Salice Salentino DOP, the winery was once key for transporting large quantities of wine to other areas. Since its renovation was completed in 2012, transformed spaces, including old cement fermenters and subterranean tanks, now serve as meeting rooms and ageing cellars, bridging the worlds of art and wine. The debut vintage of Moros, the esteemed 2012 harvest, rapidly gained acclaim, with notable figures like Robert Parker awarding it a remarkable 90/100. Crafted from bush-trained Negroamaro and a small quantity of Malvasia Nera grapes in a rejuvenated vineyard, the hands-on harvesting process ensures a low yield and high quality. After being processed, the wine ages for 12 months in French oak barriques within the winery’s underground cellar, resulting in a distinguished expression of the Salento terroir.
