“Valdovato” Nebbiolo Roero Docg – Cascina Fornace

£48,40

Valdovato Roero DOCG is an intense red wine made in Roero, Piedmont. The vineyards where Nebbiolo grapes are grown for pure winemaking are in the Santo Stefano Roero area. Practices follow the dictates of organic farming, and the vines draw essential nutrients from the predominantly sandy soil.

Vinification: The steep slopes ensure optimal exposure of the bunches. After a traditional harvest, the winemaking process begins with an initial spontaneous alcoholic fermentation on indigenous yeasts, followed by an extended maceration on the skins. The refinement lasts a minimum of ten months in large oak barrels on the second or third passage. Valdovato Roero DOCG is then bottled without clarification.

Tasting notes: This intense red wine has garnet textures and delicate fruity notes. It is characteristic on the palate, dry, crisp, tannic, with a good body, and undoubtedly harmonious. Although it boasts the potential to be aged for up to 5 to 10 years in the cellar, this wine can be enjoyed immediately and with great satisfaction.
