Fermentation lasts nine months, mainly in steel, with a portion in acacia barrels to add texture. A meticulous three-stage harvest ensures a balance of freshness and complexity, resulting in a refined wine known for its minerality and rich aromatic qualities after six months of bottle aging.
Tasting Note: This wine, with its straw yellow hue, exudes floral notes and hints of white fruit, complemented by a touch of tomato leaf and bitter almond. On the palate, it unfolds with a blend of vanilla and salt, revealing a spicy intensity that evokes a rugged landscape. The finish is long and lingering, highlighting a delicate apricot aroma amidst a mineral complexity.
