The indigenous grape varieties Pecorino and Passerina (60% + 40%) elevate and characterize this wine, marked by marvellous pleasantness and longevity.
The grapes are harvested in small boxes during the first week of September, strictly by hand, through a careful selection of the best clusters.
The choice to work with and vinify these grapes in reduction has allowed us to enhance the characteristic aromas of Pecorino.
Pale straw-yellow color. The wine expresses itself with great intensity on the nose, immediately highlighting notes of white flowers, chamomile, anise, wild herbs, and a hint of toasted almond. On the second nose, a fresh fruity note emerges beautifully, with citrus aromas of pink grapefruit and a minerality reminiscent of gravel. The entry on the palate is delightful in both texture and taste. It is a fresh, crisp, savoury, mineral, with elegant citrus aromas.
