Once on the brink of extinction in the 1980s, this exceptional local white grape has made a remarkable resurgence, showcasing its unique qualities and flavours.
Vinification: 100% Pecorino wine is harvested in late September. The process involves pressing and cryomaceration before fermentation at a controlled low temperature of 1 °C. Gentle pressing ensures quality, and the wine is aged in the bottle to enhance its complexity and character.
Tasting Note: This wine has a stunning straw yellow color and an intense bouquet of ripe fruit, green apple, delicate almond, and floral notes. On the palate, it is warm and rich, supported by vibrant acidity that enhances its roundness and full-bodied character, showcasing exquisite balance.
