Production area: Castelvecchio is part of the Karst (Carso) area in the province of Gorizia (Sagrado city). The landscape is typical of the Karst region: arid and rocky soil with a reduced stratum of red sand but rich in iron and limestone. The area is constantly ventilated and influenced by the nearby sea.
Harvesting and vinification
Manual harvest. Slight grape pressing, alcoholic fermentation and maturation sur lie in steel tanks.
Sensorial features
Bright straw with green reflection.
A complex nose with vegetal notes typical of the varietal (tomato leaves). Also, there are lovely notes of citrus grapefruit and aromas of white peach at the end. Taste On the palate, you can find the same olfactory notes as above. Finally, a slight touch of saltynes and minerals is typical of the Karst terroir. It is ideal for the first courses, as it has excellent grilled fish, fish soups, and white meat. It finds an exciting combination with Asiatic cuisine and spicy and bitter-sweet dishes.
