Vinification: The Sylvoz farming system features a density of 3,100 plants per hectare, yielding 110 quintals per hectare. Situated on flat, alluvial land, the soil is rich in mineral salts, particularly calcium carbonate and magnesium, which impart unique salinity and minerality to the grapes, reflected in the wine. The harvest is carried out manually, followed by gentle pressing and a 24-hour cryo-maceration at 5°C to harness primary aromas. The must ferments for 8-14 days at 14-16°C, then ages in steel tanks with regular batonnage, culminating in two months of bottle maturation. It has an alcohol content of 13% vol.
Tasting Note: This wine has a rich, intense bouquet of tropical fruits, yellow pepper, green tomato, and melon, enhanced by fresh elderflower notes. Its full-bodied palate showcases a well-balanced acidity and sapidity, leading to a persistent, dry, and elegant finish, with intriguing floral and mineral hints, complemented by a delightful almond paste aftertaste.
