Sauvignon Brda Slovenja – Valter Sirk

Vinification: begins with a 48-hour cold maceration and involves the individual vinification of three distinct clones. The grapes, lush and ripe, ferment naturally in large wooden foudres and French oak puncheons at controlled temperatures. After 15 months of aging on the lees with regular bâtonnage, the wine, unfiltered and bottled around two months later, aims to present the unique mineral profile of the Brda region, with approximately 1,500 bottles produced.
Tasting Note: It impresses with its elegant yet powerful character, offering a delightful freshness and remarkable minerality. Aromas of green pepper, melon, and subtle smoke intertwine, while the palate reveals flavours of red apple, mint, and hints of biscuit. Dry with medium-plus acidity, it concludes with a smoky, mineral finish, making it both food-friendly and suitable for aging.
