Vinification: The wine, named after the Madego vineyard, is an exquisite blend of 80% Cabernet Sauvignon, 10% Merlot, and 10% Carmenere from estate-owned vines. The vineyard utilizes a modified Veronese pergola and Guyot pruning, with 3.3 vines per square meter, yielding about 55 hectolitres per hectare. With basaltic volcanic soil on gentle hills and southeast exposure, the average vine age is 30 years, enhancing the wine’s complexity. Harvesting is meticulously timed, and fermentation lasts 15 to 20 days at up to 28 degrees Celsius, followed by malolactic fermentation and aging in stainless steel.
