Vinification: Prosecco Valpiana is crafted exclusively from 100% Glera grapes through a classic white vinification method. The grapes are pressed to extract fine must, which ferments without skins at controlled temperatures of 19-21°C. This is followed by a secondary fermentation in stainless-steel autoclaves, where yeast and sugars are added to create the lively bubbles, a process that may last from several days to months. The wine is then filtered, stabilized, and matured in steel for six months, ensuring its fresh aromatic profile.
Tasting Note: It displays a pale straw-yellow colour with greenish reflections and a fine, persistent sparkle. It entices with aromas of white flowers, apple, and pear. On the palate, it is soft and creamy yet refreshing, offering delightful notes of baked apple, tart lemon, and grapefruit. The medium foam culminates in a pleasing mineral and lemon finish, leaving a lasting impression.
